Ingredients
800g beef chuck or lower ribs 80 g breast salted 1 scallion 1 large carrot 8 onions (small) 1 clove garlic 1 bouquet garni 150 g green olives 1 glass of Madeira or red wine salt, pepper, nutmeg.
Preparation
Brown the bacon in the pan and remove them before browning. Remove and fry the whole piece on all sides, leaving no burn fat with onions and carrots. Reduce heat, add the bouquet, little salt, pepper, nutmeg.Cover 20 min to allow swelling in the meat turning once. Add shallots, garlic, wine, bacon and simmer 1 hour and a half. Pass the olives in water to desalt a little then add the roast with mushrooms cut into quarters. Let simmer for 45 minutes, then remove the bouquet. Serve sliced beef with gravy.
