  • 800g beef chuck or lower ribs
  • 80 g breast salted
  • 1 scallion 1 large carrot
  • 8 onions (small)
  • 1 clove garlic
  • 1 bouquet garni 150 g green olives
  • 1 glass of Madeira or red wine
  • salt, pepper, nutmeg.
